Le principe qui sous-tend l’évaluation de la sécurité des plantes GM est celui de l’équivalence substantielle, ce qui signifie que la plante GM doit être aussi sûre que son équivalent traditionnel. L’évaluation des risques associés aux OGM est réalisée en identifiant et en évaluant les similitudes et les différences entre la plante GM (du point de vue de la composition, la nutrition, l’allergénicité potentielle et la toxicité potentielle) et son équivalent traditionnel.
