L'exploitant bénéficie en contrepartie d'une aide de l'Union.En dehors du contexte de la PAC, la vendange en vert consiste à couper une partie des grappes vertes avant la véraison afin de permettre une plus grande concentration des grappes restantes, de diminuer la production de raisin par pied et d'améliorer la qualité du vin.
