    Comment Es wird zwischen zwei Gruppen unterschieden. Die aus Weintraubenkernen bzw. Trester (Pressrückständen) gewonnenen traubenbürtigen (flavanoiden) Tannine kommen dem natürlichen Tannin des Rotweins recht nahe. Die zweite Gruppe wird aus Früchten wie Galläpfeln oder Hölzern wie Eiche, Kastanie oder Quebracho (Bäume und Sträucher aus Südamerika) gewonnen. Diese werden als holzbürtige (hydrolisierbare) Tannine, oder als Ellagtannine bezeichnet, weil sie sich durch Oxidation und saure Hydrolyse zu Abbauprodukten wie zum Beispiel Ellagsäure zersetzen.

    Comment Oenological tannins are classified into two classes according to the nature of the monomeric units that characterise them: hydrolysable tannins and condensed tannins or proanthocyanic tannins. Besides the two classes of tannins, each monomer unit itself (e.g. flavan-3-ol monomers, gallic acid, ellagic acid) can also occur in tannin preparations.
