    Definition A sweetener made from the sap of maple trees, in particular the sugar maple (Acer saccharum) and black maple (A. nigrum). Initially the sap has a very low concentration of sugars, typically below 2.5%, but after concentration and evaporation it forms a sweet syrup with a minimum sugar content of 66%.     Comment As it takes approximately 40 litres of sap to make one litre of maple syrup, i.e. the annual production of a mature sugar maple, many “maple-flavoured” products have little or no real maple content.
