    Comment These diseases include many kinds of gastroenteric infections, ranging from mild diarrhea to severe life-threatening diarrhea and vomiting with fluid and electrolyte loss caused by conditions including salmonella, shigella, and staphylococcal gastroenteritis, typhoid, botulism, and more, as well as diseases caused by toxic chemicals of other than biological origin.

    Comment Ce type d'infection survient le plus souvent dans les collectivités. L'aliment en cause est principalement l'œuf non cuit, ou une préparation contenant des œufs, ou encore les laitages crus ou mal cuits, la charcuterie et les coquillages. Les germes le plus souvent responsables sont les salmonelles dites mineures ( Salmonella enteritidis), plus rarement des shigelles, Campylobacter, Clostridium perfringens et Yersinia.
