Clément's Dictionnaire des industries alimentaires gives ""deep freezing"" and ""quick freezing"" as English equivalents of ""surgélation"" or ""congélation rapide"", with a definition identical to that in Butterworth's. Collins English Dictionary gives ""quick freezing"" as the correct term for the process. Eurodicautom seems also to prefer ""quick freezing""."
