    Comment "La matière grasse, qui, avec les glucides, la matière azotée, la matière saline et les gaz dissous, constitue la matière sèche du lait, est présente dans le lait sous forme de globules gras, de 1 à 8 µm de diamètre, émulsionnés dans la phase aqueuse. À la sortie du pis de la vache, le lait est naturellement plus ou moins riche en matière grasse (3,6 à 4,4 %).
