    Definition A sweetener made from the sap of maple trees, in particular the sugar maple (Acer saccharum) and black maple (A. nigrum). Initially the sap has a very low concentration of sugars, typically below 2.5%, but after concentration and evaporation it forms a sweet syrup with a minimum sugar content of 66%.
