- Comment The heat resistance of a microorganism is characterised by D and z values. P value can be expressed as P(z,r) = process time. Where z is the z value for the target microorganism and r is the reference temperature (degrees Celsius) at which the equivalent lethality has been calculated. P value should be written with the r and z values otherwise it is meaningless. For example a standard process for Listeria monocytogenes would be: P(6.25, 70) = 2.4 minutes
