    Nóta "Le barbotage avec un gaz (argon ou azote) permet d’entraîner avec ce gaz les espèces surtout volatiles comme l’acétate d’éthyle, qui, en trop grande quantité, rend le vin imbuvable (piqûre acétique) et lui donne une odeur éthérée forte et piquante proportionnelle à sa présence. Les pertes d’arômes sont un effet collatéral de ce traitement. Le barbotage peut éventuellement être utilisé pour homogénéiser une cuvée (brassage) et pour couvrir les liquides d’un ciel gazeux conférant une protection contre l’oxygène (le volume d’air restant confiné entre le vin et la voûte d’une cuve est remplacé par un gaz neutre comme l’azote ou le gaz carbonique). Il est également possible de recourir à cette technique pour réduire la teneur du vin en gaz carbonique, en éthanal ou en oxygène, mais sans beaucoup de précision. Les méthodes membranaires sont beaucoup plus efficaces pour ajuster les teneurs en gaz (pour la désoxygénation, notamment)."
