    Comment Cette technique permet aussi d'aérer le vin. Le premier soutirage intervient à la fin des fermentations pour écarter les grosses lies de levures mortes. Pendant l'élevage, on procède à un soutirage à intervalle régulier de trois mois pour affiner les vins en fûts.
